How to make them:

  1. Take a tortilla wrap and fill it with smoked salmon, guacamole, cucumber, red bell pepper, and lettuce (for example, just use whatever you have!)
  2. Roll it up tightly and cut it into two halves.
  3. Secure with a toothpick to hold them in place until lunchtime (remind kids in the morning to remove the toothpick!).

Variations:

Leftover chicken works great as an alternative to salmon, or go for a vegetarian option. Add grated carrots, corn or cheese for extra variety.
